Lemon tart





A lemon tart is probably the first dessert we fall in love with as children. The powerful zesty taste impacts and explodes on our taste buds and leaves an indelible imprint on our memories. For a powerful dessert, it’s surprisingly easy to make.


Ingredients


4-5 Lemons (organic)

150 gram of sugar

3 whole egg

3 egg yolks

300 ml of cream.    

Pre-baked tart shell


Optional 

Meringue;

85 gram of icing sugar

4 egg whites ( or 100 gram)



Method


Zest of 1- 2 lemons and the the segments of them all, Blend the lemons

segment and zest, and the whisk the other ingredients in.


Strain the juice, and let it rest for 30 minutes, skim of the  top so it is a smooth surface free of bubbles. 


Pour it in a pre baked tart shell, and bake it for 30-45 minutes at 85-95c / 185-200f degrees depending on the oven,


It should look like a custard on top.


If you wish you can add meringue on top , but it is not necessary.

Alsacienne Pizza/Flammkuchen/Tarte Flambe






serves 4 - 8


1 roll of pizza crust - or make your own

2-3 medium size onions in thin slices 

2-3 slices of bacon cut into small dices 

Cream fraîche 

Grated cheese  -french Emmental to cover

pepper



Method


Preheat the oven to 240 degrees c.

Rollout the pizza crust





Fry up the onions till golden and place them on top of the pizza, then the bacon

Then some dollop of crème fraîche 

then at last a layer of cheese , a bit of pepper.


Turn the oven down to 200 and bake the pizza for 10-12 minutes


If you are using a traditional pizza oven as below you simply let the heat rise to 260 and it’s ready in 5 minutes:


Serve it straight away

 


Pizza dough


300 gram of flour 

20 gram of yeast

1 tablespoon of olive oil

1/2 tea spoon of sugar 

1/2 tea spoon of salt

150 ml of water


mix all the ingredients well and roll it out to a pizza
